Unlike some of our competitors (we’re not going to embarrass them by tattling) we don’t put “junk” or “leftovers” into our summer sausage.  This is 100% buffalo meat.  We don’t use fillers of pork or beef to lower the quality and the nutritional value of this product, either.  Because of this, you’ll notice that the typical greasy feeling left in your mouth with most summer sausage is non-existent with this product.  A word of advice for you if you’re giving this as a gift…generally the gals like the buffalo better than the elk – or so they tell me.  The buffalo has a taste like fine beef, while the elk is more “gamey” like venison.

These are our best selling products, and for good reason.  People eat ‘em like candy.  We hope that you don’t get the idea that these are anything like the other snack stick products on the market. With Ratchford Farms products, you don’t need to wrap a paper-towel around the product to keep grease from dripping on ya!  Our snack sticks are (again) not greasy because we don’t fill them with the by-products from other animals.  I’m a country boy, don’t get me wrong, and yeah, I sometimes eat things that have probably been in the fridge too long, but loading up a good piece of meat with byproducts is just wrong!  On our “order now” page, you’ll have the option of ordering 30 of one flavor or 30 including all three flavors.  Or, check out our sampler packs below to get a good variety of buffalo and elk, sticks and summer sausages.

Remember what I said above… elk is a bit more “gamey” than buffalo.  However, the jerky is less “gamey” than the summer sausage, FYI.  This jerky is not as dry as most.  It’s much more moist than the stuff you buy in bags at the supermarket.  You won’t dislocate your jaw bone trying to eat it, or lose your dentures, depending on your situation.  On our “order now” page, you’ll have the option of ordering 30 of one flavor or 30 including all three flavors.  Or, check out our sampler packs to get a good variety of buffalo and elk, sticks and summer sausages.
